The Viti family have always farmed on the pretty grassy plateaux of Pianu di Livia. Jean Viti naturally followed in the footsteps of his parents, grandparents, uncles, cousins and brothers.
"To tell the truth, the question never even arose. We've been making a living from farming for generations, that's all", he sums up soberly.
He began by rearing cows, then ewes, before moving on to goats, which provide him with the milk from which he now makes his cheeses. But the Viti family is all about versatility and, above all, hard work, which is why, once the milking and cheese-making are done, Jean Viti puts on his macelaru* clothes and becomes the village butcher. "I also have pigs with which I make my own charcuterie," explains the farmer. "I work all the time without realising it. My parents did it before me, because it's been our way of life for generations", he continues. When his animals give him a little respite, Jean spends his time restoring old caseddi* from the region, "just for fun", we might be tempted to say!
